A simple yet delicious appetizer made with grilled eggplant and fresh vegetables.Perfect both warm and cold!

Ingredients :
4 eggplants
2 bell peppers
2 tomatoes
any fresh herbs (I used parsley)
1 red onion
2 cloves of garlic
Salt, pepper, mayonnaise


Cut the eggplants as shown in the photo, add salt. I immediately grilled them on a grill pan. Then I placed them on a paper towel to remove excess oil. Wash the other vegetables, chop finely, add salt and pepper – this becomes our salad filling. Spread mayonnaise on the eggplants and put the filling on top.Enjoy this delicious and easy to cook appetizer!
