This homemade cherry and raisin cake with streusel is moist, slightly dense, and filled with the rich aroma of dried cherries, raisins, and a hint of Earl Grey tea. Ingredients
For the Cake:
- 2 tbsp Earl Grey tea
- 150 g unsalted butter (room temperature)
- 150 g powdered sugar
- 1 pack vanilla sugar (or 1 tsp vanilla extract)
- 2 large eggs
- 150 g all-purpose flour
- 1 tsp baking powder
- 130 g dried cherries
- 50 g raisins
For the Streusel Topping:
- 50 g unsalted butter
- 50 g sugar
- 75 g all-purpose flour
- 1 pack vanilla sugar

Step-by-Step Instructions
- Prepare the Tea:
Brew 2 tablespoons of Earl Grey tea with boiling water and let it steep. Set aside to cool. - Preheat Oven:
Heat oven to 180°C (356°F). Prepare a rectangular loaf pan lined with parchment paper (wet and wring out the parchment for better shaping). - Mix the Batter:
- Beat the softened butter with powdered sugar and vanilla sugar until creamy.
- Add the eggs one by one, beating after each addition.
- Sift the flour together with baking powder and gently mix into the butter mixture.
- Pour in the cooled tea, then add dried cherries and raisins. Mix until combined.
- Bake the Cake (First Stage):
Pour the batter into the prepared pan and bake for 25 minutes. - Make the Streusel Topping:
- In a bowl, combine flour, sugar, and vanilla sugar.
- Add cold butter and chop into the mixture with a knife.
- Rub with your fingers until it turns into a crumbly streusel.
- Add the Streusel and Bake Again:
Remove the cake from the oven after 25 minutes. Spread the streusel evenly on top. Return to oven and bake for another 25–30 minutes, until golden and crunchy. - Check for Doneness:
